I had to do something like this for a project related to the famine in 1845 in the locality I'm from and the effects of emmigration etc. I found the best way was talk to old people around, they were able to tell me loads and able to put me onto someone else, there was a fella down home too that had records of practically everyone in the peninsula, reckon theres a fella like that in every parish. Church records are a good place to start, birth certs, death certs, marraige certs. Schools, especially if they are really old schools, will more than likely have held onto records too. My primary school for instance was built in 1846 and they have a chest in the attic with roll books from the opening day to the present. I didnt have internet when doing this and got everything I needed so I expect theres a lot more options out there now for you.
